An easy and healthy chicken preparation is here. Chicken is considered as a low calorie and low fat meat, so finds a place on almost every table all over the world.
You can prepare it easily and in a very small time.
Onion 1 large
Garlic, chopped 6 cloves
Ginger, chopped 50 Gm
Vegetable oil 4 tsp
Cumin 2 tsp
Cinnamons stick 5 cm
Red chili 1 tsp
Garam masala 1 tsp
Turmeric 1 tsp
Caster powder 1 tsp
Tomatoes, chopped 400 Gm
Chicken peeled 500 Gm
Hot chicken stock 250 ml
Coriander chopped 2 tsp
Put chopped onion to a container and process it with adding little water to it, prepare a thick paste. Pour the paste in a bowl. Keep it one side. Put chopped garlic and ginger in to same pot and make a paste of it. See that paste should be smooth and even. For choice you can grate ginger and garlic with a knife also. Put in a separate bowl.
Heat some oil in a non stick pot on a medium flame. Add cumin and, cinnamon and chili flakes together. Fry for 30 sec. or till an aroma arrives.
Add onion paste to it, fry till water evaporates, and let it turn dark golden which will take another 10 mins. Add garlic and ginger paste and cook for another 3-4 mins, keep stirring.
Add garam masala, turmeric, salt and a little sugar (optional) to it and keep cooking for another 25 secs. Add tomatoes and keep stirring for another 10 mins. Let the tomatoes turn dark and form a paste look.
When tomatoes turn a paste, add chicken to it and keep cooking. After cooking for 5 mins, when chicken soak the juices, pour hot chicken stock on it. Keep it on flame, uncovered, until masala thickens and chicken turn tender. If you want more curry you can add more stock or water to it. Cook for another 15 mins and put off the flame.
Serve after sprinkling coriander upon it with rice or Nan.
HEALTHY CHICKEN BREAST RECIPE
Chicken is one of low fat dish and thus loved by a large no of people as it provide taste and not so heavy on tummy, digestible. Chicken can be prepared in company of nutritious ingredients to be served as a healthy and tasty diet.
Steamed juicy chicken breasts with bean, carrot, and spinach.
Chicken breasts, peeled 500 Gms
Spinach 200 Gms
Carrot 5 medium
Tomato 5 medium, red
Onion chopped 5 medium
Garlic 5 cloves
Ginger 1 pc.
Beans swollen in water or boiled.
Red chili powder 2 tsp
Chicken masala 2 tsp
Black pepper powder 1 tsp
Yogurt 350 gms
Turmeric 1-1/2 tsp
Salt 2 tsp
Firstly you need to marinade the chicken breasts. Put the chicken breasts in a big bowl and clean it. Leave until a little moist and Add 1 tsp red chili powder, ½ tsp turmeric powder, 1 tsp salt, ½ tsp black pepper powder to yogurt and mix it. Pour half of mixture on chicken breasts and mix it well until it soaks in it. Leave it aside.
Take washed carrot and spinach in a pan, add some water and put on flame to boil. As per the requirement, you can boil beans also. Chop onion, garlic, green chili and ginger. Put ginger, garlic and green chili in food processor and make a good paste of it. Take boiled carrot and spinach and chop them. Add beans to them and pour remaining yogurt mix on them to marinade. Put a pan on flame and pour olive oil in it. When oil is hot, fry onion, chopped tomato and make it brown. Add boiled and chopped vegetables to it and cook for another 10-15 min. Put off the flame and keep the preparation aside.
After the marinade is put for 1 hour, take a baking tray, spread some prepared tomato and onion spice on tray and put marinated chicken breasts on it. Spread marinated carrot and spinach on it and pour the remaining spice on it.
Put the tray in a preheated oven for 30 min on 300c. Bring the temp down to 200 c and leave for one hour.
HEALTHY CHICKEN BURGER RECIPE
Chicken burger Is another high rated fast food and people love to munch on them. Specially children would love it and you can prepare it at your kitchen without any extra effort.
For two servings
Chicken breast, boneless, 2
Chili sauce, mustard sauce, 1 tsp each
tomato sauce, butter sauce 1 tsp each
bun bread 2 pc.
Seasonal fruits cut in small pieces
Tomato, cut in circle 2 medium
Onion cut in circle 1 large
Half Boiled egg 1
Honey 2 tsp
Cream 2 tsp
Take all sauces in a bowl and mix them to prepare a sauce mixture. Brush the mixture on chicken breasts properly and put them in preheated oven at 200c for 40 mins. You can tight them in a grill net to draw lining on them.
Cut all fruits (pine apple, mango, apple, apricot, whatever is available) in to pieces and lace them in cream. Take the breasts out of oven and pour the mixture on it, but not before brushing it with honey.
Roast the bun bread slightly in butter after cutting them in to half. Place the breasts in between the bread slices. Put them together in oven for another 30 mins on 170c after wrapping them in a foil. Take out from oven and place slices of onion, tomato and boiled egg between bread on the top of breasts. Serve them with sauce or homemade chutney. It may be a morning breakfast or evening one. They are liked too much by children as well as adults.
HEALTHY CHICKEN SOUP
As the winter approaches, people love to eat something to keep them warm and relived from weather. So many fresh fruits and vegetables are available and the food is also digested easily, so we can afford to experiment with tasty, spicy and nutritious diets.
So are chicken soups for chicken lovers as it can work as an appetizer when served hot at as a starter.
Chicken this/ drums, skin removed, cut medium 1 lb
Chicken broth, fat free 2 cans
Black beans 15 oz
Sweet corn 15 oz
Diced tomatoes 15 oz
Cumin and oregano grounded 1 tsp
Boil chicken in a saucepan, put the flame on low and cover it until chicken is cooked. Put the chicken aside and let it cool. Boil the broth, add beans, corn, tomatoes, with cumin and oregano. Leave to simmer for five minutes or until flavors blend together.
Separate the bones from chicken and cut small pieces or the size you like. Put the liquid and broth together and add chicken to it. Put on medium flame and stir. Allow the material to thicken. Add salt as taste. You can add a little lemon juice or lemon slices to it. Some sauces would also help in lifting the taste. It can be served with main course too, with a loaf of bun or bread. Always put some tomato, chili sauce or chutney with it to add taste.
Healthy chicken salad
You have got some pieces of roasted chicken left and wondering what to do with it? Don’t worry; you can prepare a healthy and nutritious dish with it. Be ready to prepare chicken yogurt salad and add a taste to your dinner.
Chicken pieces, medium whatever available/ 300 Gms
Seasonal fruits cut in small pieces
Olive oil 2 tsp
Black pepper powder 1 tsp
Yogurt sweet, creamy 500 Gms.
Tomato cut in small pieces 3 pc
Onion, chopped 2 pc
Heat water on burner and when boiled, add chicken to it. Cover the pan and allow the meat to moist (It will be done in case you have got roasted chicken leftover). Otherwise boil the chicken until it cooks.
Put chicken in a big bowl when cut in small pieces. Keep aside. Put yogurt in a pot and beat it to form a creamy, uniform paste. Check it with spoon.
Take the onion in a sauce pan and fry in 1 tsp olive oil. When turns brown add tomato pieces to it. Add three tsp of water and black pepper powder and salt to it. Let it form a paste. When turns red black, put it down. Mix it thoroughly. Pour the paste on the chicken pieces spreading all over. Leave for 15 mins. To be soaked. Take yogurt mixture and pour on the chicken, all over it, filling it fully. Decorate with chopped fruit pieces and if you wish put one chopped onion also. Sprinkle back pepper powder and salt on it. You can spread mustard sauce in a small quantity if you like it that way. Sweet corn or black beans could be added too.
At the end sprinkle some chopped coriander on it and put on table. It will be loved as your other dishes, you bet.
